From what I can recall practically all of Serizawa's scenes from the original 1954 version are in the 1956 cut. Although it's been years since I've seen the 1956 version so I could be mistaken.
I do remember that the dialog with him reveals more hints to his backstory. For example he denies having known any German scientists, shamefully covering up his Nazi ties. And I don't remember whether or not the 1956 cut mentions how he got his scar-- It's fairly vague, but the American cut tries its damnest to remove ties with WWII.
I highly recommend finding out yourself and watching the 1954 original. It's readily available everywhere these days. There's atleast five different releases of the 1954 original floating out there right now.
