The problem is a lot of Ultraman is hard to come by because so little of it is released officially in North America. (Assuming that's where you're from.) However I've had success getting people into the series starting with the movie Ultraman: The Next, followed by the sequel series Ultraman Nexus.
Ultraman Max is also a great one to start with. Or the Ultaman Zero movie trilogy, which is a great deal of fun.
